Welcome to week one of the 21 Days of Student Meals challenge. We are going to get the ball rolling with some classic recipes to keep you fed, well and under budget. With the recipes you can alternate or switch in and out with proteins, otherwise if you’re vegetarian, swap in something suitable such as beans or tofu. I want you to be able to personalise it just for you.

Day Three: Minestrone Soup
Day Four: Simple Tomato Spaghetti
Day Five: Vegetable Stir-fry by Jamie Oliver

Day Seven: Stuffed Baked Potato
And here’s the thing, you don’t have to do them in order. You can switch them around as you like. What will happen though is we will talk about each recipe, tips for making it, suggestions and ideas each day per the list. So if you skip ahead, hit a snag, just wait for that day to come around and we’ll be able to help!
