If you want a reasonably priced, healthy dinner for yourself or a crowd, this curried quinoa, mixed vegetable and chicken dish is simple, fast and soooo yum! And better yet, it makes a great next day lunch.
The most expensive part of the whole thing will either be the quinoa or the chicken breast. Keep an eye out for either in the supermarket as they store well. The chicken would be kept in the freezer, obviously. Both are really good for you and mixed with the vegetables will give you everything you need in a well-rounded meal.
Frozen Vegetables – 2 cups
Broccoli – 1 cup – small pieces
Onion – 1/2 diced
Chicken Breast – 2 medium-sized, diced
Honey – 1 Tbsp
Soy Sauce – 1 Tbsp
Garlic – 2 Tbsp
Curry Powder – 3 Tbsp (or more)
Coconut Oil (or similar) – 2 Tbsp
Corn Flour – 1 Tbsp
Quinoa – 1 cup (dry)
Chicken Stock – 1 1/2 cups
This size portion serves 4 generously. Can be double or tripled.
