Team, meet our Roasted Chicken, Pumpkin & Cauliflower Curry. Curry, meet the team. You guys are about to be best friends in the Step Brothers, bunk beds kinda way. This is THE easiest of meals to prepare and make (hello, set the oven and walk away) you’re going to love this simple meal for weeknight dinners and day after lunches. So let’s get going on that, shall we?
And yes, for those of you who complete our 21 Days of Student Meals Challenge, this recipe will be very familiar indeed. This one was a crowd favourite and without the chicken is just as delicious for our Vegetarian folks. I like to roast this one in a large pan with the lid off (or without foil) to get a bit of browning on the top. Trust me, it tastes better, so grab your ingredients, a nice big roasting pan and go nuts.
Note: Poke the chicken with a sharp knife to check, a clear liquid is good, red or pink is bad and you should keep cooking.
