The Leave Home Blog Chicken Taco Bowls are a perfect meal, as light or heavy as you want it to be, for lunch or dinner. We used a supermarket BBQ chicken in ours, but you can cook up your own in a burritos spice mix. Whatever works. Plus, the leftovers ROCK.
We call this the perfect summer meal because if you purchase your chicken and throw on a few spices you don’t even have to turn on your oven or stove. You simple chop and dice and slice your preferred ingredients and hey presto, chicken taco bowls everyone will love. They take no time at all to prepare and you’re not going to melt in the kitchen trying. And if you happen to be able to head outside with a cold beer and enjoy it with a friend (lol), then even better!
*double or triple the recipe as required per person BUT keep in mind these are generous serves and that you could probably expect to have yourself an entire meal from leftovers. So if you’re serving two, go with the amounts given.
