Our Simple Quinoa + Brown Rice Tuna Salad is the perfect lunchbox lunch or as a main meal during the week. This simple (seriously, there are three steps in the directions) meal packs a punch in terms of being good for you by covering off on a lot of the good health bases.
There really is no excuse not to take a packed lunch to work when you can make this in advance (simply double the ingredients as required) and prepare in advance. It keeps really well in the fridge, just don’t add the spinach leaves until you’re ready to eat. Getting bored? 1 small can of tuna
1 packet microwaveable quinoa and rice blend
1 small carrot, grated
1 cup cherry tomatoes, sliced in half
1/2 avocado diced
1 spring onion shoot, sliced
1 serve baby spinach leaves
olive oil, salt & pepper to taste
